Fleur de Sel means salt flower and is the queen of the salt varieties. The extraction of the salt alone is something in itself. The noble fleur de sel can only form on warm and windless days.
While the sea salt crystallises, a thin layer of salt flakes is formed next to the classic coarse-grained sea salt. This is carefully skimmed off by hand and processed into fleur de sel.
The special thing about Fleur de Sel, apart from its mild taste, which develops only gradually, is above all the Church effect. The fine salt flakes crackle lightly in the mouth with every bite.
