Meat knowledge

Secreto, the secret of the Spaniards, is a cut that actually holds a little secret. First and foremost, its hiding place! This wonderful piece of tenderloin is located between the back and the back fat of the pig. An area where you would hardly expect to find something so tender.

Due to its pronounced marbling, the meat is fabulously tasty and ideal for short roasting or grilling.

A Secreto rarely comes alone

Once you have tasted the "secret" and still relatively unknown Secreto, you just want one thing: more of it! Because pork has never been so tender, guaranteed. Whether roasted or grilled, thanks to its marbling it remains wonderfully juicy and has a smooth flavour.

Where does the secreto of pork sit?
We reveal the secret

The secret fillet is not so easy to discover. It sits well hidden between the back and the back fat and only becomes visible when cut correctly.

If you cut the secreto crosswise, the muscle between the fat covers is hard to see. If, on the other hand, it is cut lengthwise, the muscle is visible and resembles a small fillet. Hence the name "secret fillet" or "secreto".

We recommend one secreto per person. Three to four Secretos are included in one order unit.

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us.

A requirement that is also noticeable in the taste. If you compare pigs from factory farms, for example, one thing is immediately clear: due to the permanent stress, the meat is much firmer, loses a lot of water during roasting and has hardly any flavour of its own.

For us at Fitmeat, this kind of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After the careful and stress-free individual slaughter of the pigs, our butchers leave the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful aroma.
