What is the best way to cook chuck steaks?
This outstanding cut from Austrian Wagyu beef is perfect for grilling, pan-searing or slow braising. Cooked whole, the meat becomes so tender that it practically falls apart on the fork.
Prepared as a steak, Wagyu beef impresses with its exceptional marbling. Even with a short cooking time and a hot sear, it remains incredibly juicy and wonderfully tender.
Chuck steak already contains a generous amount of intramuscular fat, but Wagyu takes this to another level, resulting in a rich and intensely flavourful taste.
Wagyu Chuck Steaks: The Chuck Norris of Steaks
One factor that simply cannot be overlooked when it comes to great steaks? Exactly – the perfect sear and those irresistible roasted aromas. To achieve this, the steaks should first be seared over very high heat. Afterwards, finish cooking them over indirect heat on the grill or in the oven until they reach your preferred level of doneness. We recommend a core temperature of 54 °C for a beautifully pink centre.
A small tip: To keep the juices locked inside and ensure a tender interior, season the steak with salt only at the very end of cooking.
Wagyu vs. Kobe Beef – what’s the difference?
Wagyu beef has developed into a global culinary sensation. In many ways, it has even surpassed the hype once surrounding Kobe beef. Interestingly, however, the two are closely related: Kobe beef is essentially a specific subtype of Wagyu cattle.
Much like sparkling wine can only be called Champagne when it originates from the Champagne region of France, true Kobe beef must come from specially certified cattle raised in the Kobe region of Japan.

How Wagyu developed its famous marbling
For a long time in Japan, Wagyu cattle were primarily used as working animals. Their ability to endure physical strain was therefore particularly important. Over time, the animals developed so-called “slow-twitch muscle fibres” to support their stamina.
This allowed them to draw energy from fat reserves stored within the muscle. As a result, Wagyu cattle developed their unique characteristic: the extraordinary marbling that has made this beef famous around the world.
What does a Wagyu steak taste like?
The Wagyu chuck steak is an exclusive delicacy for true gourmets. The meat is remarkably tender and almost melts in your mouth. On the palate it creates an explosion of rich flavours combined with a texture unlike any other beef experience.

The Origin of Our Wagyu Beef
Our premium Wagyu beef comes from farmer Günter Renner, who raises his cattle with great passion in Berg im Attergau. The Wagyu steers and heifers grow up there in a natural environment with plenty of space, excellent feed and the freedom to move around. During summer they spend their time on a vast alpine pasture in the Wildalpen National Park (Lower Austria), where they can mature peacefully – far away from stress and confined conditions.
With a minimum age of 40 months at the time of slaughter, the animals reach an exceptional level of maturity, reflected in the fine marbling and the remarkable flavour of the meat. Low-stress slaughter and careful butchering in our own farm butchery ensure outstanding quality, tenderness and flavour. Every Wagyu cut from Fitmeat therefore represents honest provenance, respectful animal husbandry and uncompromising premium quality.
