Beef Plate Ribs vs. Pork Spare Ribs

Place beef plate ribs next to classic pork spare ribs and you might find your jaw dropping. They are by far the thickest ribs you will find on a cut of beef.

A rack with 3–5 ribs can easily weigh around 4.5 kg and is often at least fist-thick. Naturally, this also means a far more generous layer of meat and fat. A true highlight for dedicated and experienced pitmasters.

Preparing Plate Ribs

Due to their impressive size and high fat content, plate ribs are made for smoking – and patience is essential. The cooking process usually takes considerably longer than what you might be used to with classic pork spare ribs.

These ribs deliver a deep, rich beef flavour and are typically seasoned simply with salt and pepper. A fantastic alternative to short ribs – or the perfect way to surprise your friends with truly massive ribs.

In addition to their impressively thick layer of meat, these ribs stand out thanks to the extraordinary marbling of Wagyu beef. These delicate fat structures are exactly what give Wagyu its unmistakable flavour and remarkable tenderness. Their size is equally impressive – some smaller grills might even reach their limits.

What makes Wagyu plate ribs so special?

Wagyu cattle are renowned worldwide for their particularly fine and even marbling. Delicate veins of fat run directly through the muscle, giving the meat its incomparable juiciness, tenderness and intense flavour.

This characteristic is especially evident in plate ribs. During slow cooking – such as smoking or low-and-slow grilling – the intramuscular fat gradually melts, creating an incredibly juicy, butter-tender result with a rich and full-bodied beef flavour.

Wagyu vs. Kobe Beef – what’s the difference?

Wagyu beef has developed into a true global culinary sensation. In many ways, it has even surpassed the hype once associated with Kobe beef. Interestingly, however, the two are closely related. Kobe beef is essentially a specific subtype of Wagyu cattle.

Much like sparkling wine can only be called Champagne when it originates from the Champagne region of France, true Kobe beef must come from specially certified cattle raised in the Kobe region of Japan.

Compared to Japanese Kobe cattle, our Wagyu cattle are raised on beautiful small family farms in Austria. With the highest standards of quality, knowledge and dedication, our farmers carefully rear these exceptional animals. The outstanding characteristics of Wagyu – particularly its intramuscular fat, fine muscle fibres and naturally high glutamic acid content – combine here with attentive and responsible farming. Plenty of space to roam, exclusively natural feed and slow, careful rearing guarantee exceptional quality.

How Wagyu developed its famous marbling

In Japan, Wagyu cattle were historically used primarily as working animals. Their ability to endure physical strain was therefore especially important. Over time, the animals developed what are known as “slow-twitch muscle fibres” to support their stamina.

This allowed them to generate energy from fat stored within the muscle. At the same time, Wagyu cattle developed their unique hallmark: the extraordinary marbling that has made this beef famous around the world for its remarkable culinary experience.

The Origin of Our Wagyu Beef

Our premium Wagyu beef comes from farmer Günter Renner, who raises his cattle with great passion in Berg im Attergau. The Wagyu steers and heifers grow up there in a natural environment with plenty of space, excellent feed and the freedom to move around. During summer they spend their time on a vast alpine pasture in the Wildalpen National Park (Lower Austria), where they can mature peacefully – far away from stress and confined conditions.

With a minimum age of 40 months at the time of slaughter, the animals reach an exceptional level of maturity, reflected in the fine marbling and the remarkable flavour of the meat. Low-stress slaughter and careful butchering in our own farm butchery ensure outstanding quality, tenderness and flavour. Every Wagyu cut from Fitmeat therefore represents honest provenance, respectful animal husbandry and uncompromising premium quality.
