The fillet is one of the best cuts of pork. It is extremely tender and has a wonderful flavour of its own. The cut is obtained from both sides of the spine below the loin chop. This is a muscle part that is used very little and is therefore particularly tender, juicy and lean.

What is pork loin roast?
Pork loin roast is also called sirloin roast and is basically nothing more than a fillet. However, it is very special because it is the best of the best.
In pigs, the tenderloin is found on the inside of the short loin, parallel to the backbone. It has nothing to do with the actual lungs. Due to its excellent meat structure and the fact that these fillets are extremely rare, it is by far the most popular prime cut of pork
