St. Louis cut ribs are becoming increasingly popular. And there is a good reason for this: these ribs have the perfect meat-to-bone ratio and are therefore much more flavourful.

St. Louis cut ribs are obtained from the centre rib and with the cartilage cut away. But the real reason is that there is significantly more meat on these ribs, making them juicy and incredibly delicious.

What makes our Fitmeat St. Louis Cut Ribs different from the rest?

First of all, the breed of the pigs themselves. Unlike others, our St. Louis Cut Ribs come from Austrian Gustino straw pigs

Living on an idyllic family farm, the straw pigs have a really good life. With spacious stalls and cosy resting areas lined with straw bedding, they grow up protected in small groups, have the opportunity to play and be active, can cuddle in the straw and simply feel really good. Slaughter takes place either on the farm or at a nearby butcher's. This minimises stress on the animals and the quality of the meat is correspondingly high.

Our pigs are raised at Biohof Greflgut and on carefully selected farms in the region – with plenty of space, fresh air, and lots of freedom. They decide for themselves whether they would rather relax in a warm straw bed or enjoy the sunshine outdoors.

Raised in small groups, fed with high-quality feed, and provided with plenty of opportunities to play and explore, they live exactly the kind of life we believe happy animals should have. Because for us, genuine animal welfare is not a trend, but a fundamental requirement.

We use carefully selected pig breeds such as Duroc, Pietrain, and Swabian-Hall pigs, as well as crossbreeds thereof. The result: wonderfully aromatic, juicy meat with fine marbling and full flavour.

Slaughter takes place stress-free directly on the farm or at a nearby butcher – without long transport routes and in a calm environment. Afterwards, the meat is given time to mature properly, resulting in exceptionally tender cuts and honest meat enjoyment with a good conscience.
