The bat steak cut from the calf (heifer) is an insider tip among connoisseurs.A real delicacy that takes spices wonderfully well and is easy to prepare. A tip: salt, sear and leave to marinate for five minutes. Then cut into slices, season with sea salt and pepper and serve with a homemade dip. Quick, simple and absolutely delicious!
Meat knowledge
The Spider Steak is obtained from the lock bone of the hind leg, which is responsible for the movement of the pelvic bone. Despite its long grain, the steak is excellent for quick grilling, but should always be cut against the grain.
Spider Steak: Juicy and tender like a filletWhat many people don't know is that spider steak is very similar in tenderness to a fillet steak. Its flavour is strong, wonderfully intense and yet the texture is wonderfully tender.
The steak actually owes its name to its appearance. When spread out, the steak resembles a bat or a spider's web. In Austria, the steak is therefore known as bat steak, in Germany it is known as Schulterschleim or Schieferfleisch and in the USA it is served as spider steak.
What makes our Spider Steak so special?
The wonderfully pronounced marbling is a real highlight. The meat is beautifully dark and incredibly tender.
But the cut is still one of the more unknown in Austria and Germany - unless you are in a circle of BBQ fans. They know exactly what's what and appreciate the steak for its flavour and incomparable texture.

There they grow up in small groups, have plenty of room to play and socialise, can cuddle in the straw and simply feel very comfortable. Slaughter takes place either on the farm or at a nearby butchery or abattoir. This minimises the stress on the animals and the quality of the meat is correspondingly high.

Herkunft und Haltung
Our pigs are raised at Biohof Greflgut and on carefully selected farms in the region – with plenty of space, fresh air, and lots of freedom. They decide for themselves whether they would rather relax in a warm straw bed or enjoy the sunshine outdoors.
Raised in small groups, fed with high-quality feed, and provided with plenty of opportunities to play and explore, they live exactly the kind of life we believe happy animals should have. Because for us, genuine animal welfare is not a trend, but a fundamental requirement.
We use carefully selected pig breeds such as Duroc, Pietrain, and Swabian-Hall pigs, as well as crossbreeds thereof. The result: wonderfully aromatic, juicy meat with fine marbling and full flavour.
Slaughter takes place stress-free directly on the farm or at a nearby butcher – without long transport routes and in a calm environment. Afterwards, the meat is given time to mature properly, resulting in exceptionally tender cuts and honest meat enjoyment with a good conscience.
