Why short ribs?
Let’s clear up a common misconception right away: although the name “short ribs” might suggest something small, there is actually nothing short about them. Quite the opposite – beef ribs are impressively substantial. Alongside their thick layer of meat, which makes them such a pleasure to eat, they also contain a natural amount of fat. With Wagyu cattle this marbling is particularly pronounced – and that is exactly what makes the difference. During slow cooking, the intramuscular fat melts and creates an incredibly juicy, tender and flavourful result.
How to prepare short ribs properly
Our Fitmeat Wagyu short ribs need a little time and are perfect for smoking. The ribs are gently cooked or smoked over several hours (often well over 10). This allows the fine Wagyu fat to melt slowly and develop an especially rich, almost creamy flavour. The key is patience: always cook them slowly at low temperatures.

A small tip:
If you want to give this already exceptional meat the finishing touch, choose a slightly acidic marinade. This helps break down the proteins, making the ribs even more tender and juicy. The silver skin should be removed before cooking. After around 6–8 hours, the meat will begin to loosen from the bone and become beautifully tender.

The Origin of Our Wagyu Beef
Our premium Wagyu beef comes from farmer Günter Renner, who raises his cattle with great passion in Berg im Attergau. The Wagyu steers and heifers grow up there in a natural environment with plenty of space, excellent feed and the freedom to move around. During summer they spend their time on a vast alpine pasture in the Wildalpen National Park (Lower Austria), where they can mature peacefully – far away from stress and confined conditions.
With a minimum age of 40 months at the time of slaughter, the animals reach an exceptional level of maturity, reflected in the fine marbling and the remarkable flavour of the meat. Low-stress slaughter and careful butchering in our own farm butchery ensure outstanding quality, tenderness and flavour. Every Wagyu cut from Fitmeat therefore represents honest provenance, respectful animal husbandry and uncompromising premium quality.
