Meat knowledge

The two strands of muscle that run along the top of the spine are called the wild boar's back. As these muscles are relatively little exercised, the meat has a significantly higher intramuscular fat content.

The boar's back is always considered to be the finest cut, with a tender texture. Prepared as a steak, wild boar back is a wonderful change of pace with an intense aroma.

If you compare it to ordinary pork, you will immediately notice its dark colour. Much leaner than pork, wild boar has a much more intense gamey flavour.

The flavour is simply incomparable. Much more intense than roe deer or venison, wild boar has a distinct gamey flavour that often needs no further seasoning.

What makes wild boar meat so delicious?

In professional circles, wild boar is also known as boar. This term comes from the dark, almost black colour of the animals' fur. But there are other aspects that distinguish wild boar from its pinker cousins.

Wild boar meat is a delicate delicacy, prized for its distinctly succulent texture. This is partly due to the higher fat content of wild boar.

But what does this have to do with organic? Game is generally a very healthy meat, provided it comes from the wild, of course. Their diet includes everything the forest has to offer. This includes acorns, mushrooms, leaves and herbs. Feed additives are out of place in the wild, just as they are here.

At Fitmeat we place great emphasis on fine cuts of meat. Our high-quality venison comes exclusively from wild animals shot by experienced hunters in Salzburg and the Königsbrunn region of Lower Austria.

Because Fitmeat places the highest priority on perfect quality and respectful treatment of animals, we strictly disassociate ourselves from creel hunting. We and our hunters do not allow the animals to be rushed or driven, which is a major loss of quality.

Instead, we use a gentle method that does not cause stress to the wild animals, thus ensuring high meat quality and a fine texture.

What makes our game different?

After a successful hunt, the game is taken to a selected butcher, where it undergoes a further veterinary examination before the meat is matured.

Only then is the game processed into genuine game specialities by master butcher Martin Böck in Rastenfeld with a trained eye and careful hand. In addition to the classic cuts such as back, leg or ragout, specialities such as venison burger patties are also produced.

Hunters and butchers work hand in hand to guarantee the best possible game quality. This includes a precise shot, an enclosed chilling chamber and the professional and flawless processing of the venison

The Salzkammergut in Upper Austria, with its large areas of forest and meadows and low population density, is the ideal home for the wild animals that have settled here.

Rivers and streams ensure that the area is well watered. This allows grasses and flowers to grow, providing first-class food for the animals. Careful hunters and foresters manage these areas with great dedication.

The hunted animals are brought to the nearby game room, inspected by the official veterinarian and respectfully processed by our master butcher.
