The noble ragout meat of wild boar is one of the classics and game dishes and is ideal for hearty stews and goulash. With its strong, harmonious aroma, wild boar is similar to its fellow species, the domestic pig. The wild boar meat already fills the room with a wonderful gamey smell during preparation and delivers an intense gamey flavour for real gourmets. In comparison, however, the meat texture is significantly lower in fat. Its short fibres make the meat particularly tender and extremely juicy

How does the flavour of wild boar develop?
Wild boar, also known as wild boar, live in the wild and have chosen the dense undergrowth as their natural habitat. In the thickets of the Austrian forests they can really eat their fill of fresh herbs, nuts and roots. Depending on what tastes best to them, the omnivores have culinary freedom. This is exactly what makes wild boar meat so interesting, because due to their freedom of movement and the different food, the meat can develop different taste nuances

After a successful hunt, hunters and butchers work hand in hand to guarantee the best possible game quality. This includes, among other things, an exact shot, a close cooling chamber and the professional and flawless processing of the venison.
With a trained eye and a careful hand, the venison is processed into game specialities by master butcher Martin Böck in Rastenfeld. In addition to the classic cuts such as backs, legs or ragout, specialities such as venison burger patties are also produced.

Quantity per person
We recommend approx. 180g ragout per person. The actual amount may vary depending on the side dishes. For particularly rich side dishes, we recommend calculating smaller portions.
Herkunft und Haltung

The Waldviertel and Königsbrunn region in Lower Austria, with its large forest and meadow areas and low population density, is the ideal home for the wildlife that lives here
Rivers and streams provide good irrigation for the area. This allows grasses and flowers to grow, providing prime fodder for the animals. Careful hunters and foresters manage these areas with great dedication.
The hunted animals are brought to the nearby game chamber, inspected by the official veterinarian and respectfully processed by our master butcher.
