Fillet is one of the best parts of the pig, it is extremely tender and has a wonderful flavour of its own. The piece is obtained from the two sides of the spine below the loin chop. This is a part of the muscle that is used only sparingly and is therefore particularly tender, juicy and lean.

Our fillet of straw pork is probably the most tender and popular noble cut of pork. In addition to its particularly fine flavour, it is significantly lower in fat than other types of meat. You can prepare a fillet perfectly well whole, cut it into fine medallions or fry it in a bacon coat.

What is pork loin roast?

Pork loin roast is also called sirloin roast and is basically nothing other than fillet. However, it is very special because it is the best of the best.

In pigs, the tenderloin is found on the inside of the short loin, parallel to the spine. It has nothing to do with the actual lungs. Due to its excellent meat structure and the fact that these fillets are extremely rare, it is by far the most popular noble cut of pork

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us.

A requirement that is also noticeable in the taste. If you compare pigs from factory farms, for example, one thing is immediately clear: due to the permanent stress, the meat is much firmer, loses a lot of water during roasting and has hardly any flavour of its own.

For us at Fitmeat, this kind of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After the careful and stress-free individual slaughter of the pigs, our butchers leave the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful aroma.
