Meat knowledge

The loin, i.e. the back of the pig, is a particularly noble piece. The meat is only slightly streaked with fat and therefore on the lean side. However, this is not a problem in terms of taste - because it has a fantastic flavour of its own that goes well with a variety of dishes.

On the whole, it divides into the lean and short-fibred "short loin" and the fat-infused "long loin". At Fitmeat you'll get a perfect Loin without neck and fat, sheet ribbed, untrimmed. 

What are the differences in preparation?

The muscle meat of the short loin is excellent for cutlets, but it is also ideal as a whole roast, provided the protective fat rind is present. For chops or steaks, on the other hand, the meat of the long loin is better. It also cuts a slightly better figure on the barbecue, as it dries out less quickly.

However, due to the significantly lower fat content, some caution is required when frying or grilling. Cut into steaks, the meat should not be too thin - otherwise the meat could dry out

Loin without neck and fat from the straw pig - a real treat

The meat is obtained from the rear back, a muscle that is moved very little by the pigs. Therefore, the meat is incredibly tender, short-fibred and lean. A wonderful meat delight that is also incredibly versatile.

Almost any dish can be prepared with it. Whether on the grill or in the pan - there are no limits.

What makes our Fitmeat straw pigs so special?

First of all, the breed of the pigs themselves. Because our first-class loins come from Austrian Gustino straw pigs. They lead a really fine life on an idyllic family farm. With spacious stalls and cosy resting areas laid out with straw bedding.

There they grow up sheltered in small groups, have opportunities to play and occupy themselves, can cuddle in the straw and simply feel super comfortable. Slaughtering takes place either on the farm or at the nearby butcher or slaughterhouse. This way, there is hardly any stress for the animals and the meat quality is correspondingly high.

We recommend one kilogram for three to four people.

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us.

A requirement that is also noticeable in the taste. If you compare pigs from factory farms, for example, one thing is immediately clear: due to the permanent stress, the meat is much firmer, loses a lot of water during roasting and has hardly any flavour of its own.

For us at Fitmeat, this kind of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After the careful and stress-free individual slaughter of the pigs, our butchers leave the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful aroma.
