Where are the pork cheeks?
The pork cheeks are located on the head and are the jaw muscles of the pig. This is an area that pigs move around a lot, which results in long and very tasty muscle fibres. Due to the high proportion of fat and connective tissue, the pork cheeks should be braised for a long time.
Pork cheeks as a gourmet trend
The collagen contained in the pork cheeks is transformed into butter-soft gelatine during the long braising process and adds a lot of flavour. Pork cheeks have regained their value due to the trend in our kitchens - cooking like grandmother - and are prepared in a refined way by gourmets as well as star chefs.
However, it is less suitable for fast cooking. Patience and tact are called for here. What was once considered a dish of poor cuisine is now, however, in the absolute top restaurants. Because the fine taste and the crumbly meat are simply unmistakably good!

Herkunft und Haltung
Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us.
A requirement that is also noticeable in the taste. If you compare pigs from factory farms, for example, one thing is immediately clear: due to the permanent stress, the meat is much firmer, loses a lot of water during roasting and has hardly any flavour of its own.
For us at Fitmeat, this kind of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.
After the careful and stress-free individual slaughter of the pigs, our butchers leave the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful aroma.
