Pork cheeks are characterised by a high proportion of connective tissue and fat, they have long meat fibres and are predestined for braised dishes with red wine and braised vegetables. The fat trimmings are ideal for searing the cheeks.

Where to find pork cheeks?

The jowls are located on the head and are the jaw muscles of the pig. This is an area where pigs move around a lot, resulting in long and very tasty muscle fibres. Due to the high proportion of fat and connective tissue, pork cheeks should be braised for a long time.

The collagen in pork cheeks is transformed into buttery gelatine during the long braising process, adding a lot of flavour. Pork cheeks have regained popularity as a result of the trend in our kitchens to cook like grandmother, and are being prepared in sophisticated ways by gourmets as well as star chefs.

Pork cheeks are not suitable for quick meals. However, it is less suitable for fast cooking. Patience and tact are required. What was once considered a dish of the poor cuisine is now served in the very best restaurants. The fine flavour and the crumbly meat are simply unmistakably good!

We recommend one kilogram of pork cheeks for three people.

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us. A requirement that is also reflected in the delicious taste.

If you compare pigs from factory farms, for example, one thing is immediately clear: due to the constant stress, the meat is much firmer, loses a lot of water when roasted and hardly has any flavour of its own.

For us at Fitmeat, this type of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After careful and stress-free individual slaughtering of the pigs, our butchers allow the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful meat flavour.
