The tri-tip steak is a very finely marbled and flat steak that is ideally roasted or grilled over a high heat. It is also known as the mayor's cut and has absolutely earned its place in the league of well-known prime cuts.

Meat knowledge

The Tri-Tip Steak, also known as Hüferschwanzl, Bürgermeisterstück or Maminha, is a wonderful piece of meat to grill or simmer. In Viennese cuisine it is known as "braised meat", in America and South America it is one of the absolute classics on the barbecue.

Grilled over an open fire on a skewer, the Tri-Tip Steak develops an extraordinary flavour. The steak is nicely marbled and has a light bite.

So many names, so much flavour!

Bürgermeisterstück, Tri-Tip Steak, Hieferschwanzl - the list of names for this steak is long. Whatever it's called, one thing's for sure: the taste is simply ingenious. No wonder this noble cut was once reserved for high personalities - hence the name 'mayor's cut'. Its triangular and rather large shape is also characteristic.

A classic tri-tip steak is a particularly fine and highly aromatic meat, consisting almost entirely of muscle. As a result, it can weigh between 750g and 1,000g on the scales or on the grill.

The steak was discovered by chance. When American butcher Bob Schutz had plenty of beef but no steaks, he got creative. Without further ado, he turned the muscle between the hip and the ball into a steak. Enthusiasm was great and the tri-tip was born.

We recommend a 1.3 kg tri-tip steak for two to four people.

Quality is our top priority and, when it comes to beef, a few factors are crucial. These include the perfect breed of cattle, the age of the animals and optimum feeding, free from concentrated feed.

However, this alone is not enough to meet our requirements. We don't do things by halves when it comes to the quality of our meat products! That's why 100% of our animals come from Austria. The farms are located in the lake district of the Salzkammergut in beautiful Upper Austria.

At Fitmeat, we also only process the finest meat from heifers, also known as calves, and steers. The meat has a wonderful marbling and a delicious flavour. Our classic cattle breeds also include Red-Angus, Black-Angus, Charolais, Limousin, White-Blue Belgian and Wagyu, as well as various crossbreeds.

Our cattle are 4x AT labelled. This means that birth, rearing, slaughter and cutting take place 100% in Austria. The value chain therefore remains entirely in Austria. We distance ourselves from long animal transports and select our partners very carefully. We therefore rely on animals that are kept in a species-appropriate manner, born and raised by small farmers, and on butchers who know both the farmer and the animal personally.

Our butchers allow the cuts to mature on the bone for a long time. This gives us first-class, well-hung meat that does not lose any water during roasting and can be enjoyed with a clear conscience.
