Compared to classic beef cheeks, veal cheeks are somewhat smaller, but all the more tender and soft. They also belong to the classic braised dishes that require a lot of good red wine and spices. After a few hours they become soft and unbelievably tender - that you can even cut them with a spoon. But they are also extremely popular with barbecue fans.

Our Veal Cheeks are simply delicious. The particularly tender and soft meat makes them perfect for braised dishes or for the grill. Whether in the Dutch Oven or in the smoker, wrapped in bacon or just rubbed - veal cheeks are a real juicy aroma experience.

The name already suggests it -  Veal Cheeks are the cheeks of the veal and are accordingly relatively often in motion. This is exactly what makes the meat extremely tender and juicy. If you compare the veal cheeks with the beef cheeks, the difference quickly becomes clear: the veal cheeks are somewhat smaller and have an even finer meat structure.

How are  Veal Cheeks prepared?

First and foremost,  Veal Cheeks are perfect for braising. Their intensive meat aroma is also ideal here. But they are also excellent on the grill or in the smoker. However, a lower temperature should be used.

Calf (also known as heifer) is the name given to female cattle that are already sexually mature but have not yet calved. This is of course also recognisable from the meat structure Heifer.

The meat of a Heifer has a bright dark red colour and extremely fine fibres. When it comes to marbling, veal is an absolute highlight, which makes it extremely juicy and tender.

This special marbling is the result of the slow growth of the calves, which ensures fine fat storage. Compared to young bulls, they also have significantly less weight. The combination of wonderfully distributed fat in the muscles and dry aging gives the flavour of the Heifer a distinctly full-bodied aroma.

The cattle are approximately 2 - 2.5 years old and come from the Black-Angus, Red-Angus, Charlois, Limousin or Simmental breeds. In addition, our cattle are awarded 4x AT. This means that birth, rearing, slaughter and butchering take place 100% in Austria. The value chain thus remains completely in Austria

Our farmers are located in the Waldviertel in Lower Austria, the Salzkammergut and the Salzburger Land. Stress-free slaughtering takes place either on the farm or at the nearby butcher

We distance ourselves from long animal transports and choose our partners very carefully. Our butchers let the cuts mature on the bone for a long time. This way, we get first-class and well-hung meat that leaves no water when roasted and can be enjoyed with a clear conscience.
