Roe deer - For real gourmets Juicy & tender with a premium flavour

Roe deer is arguably the most tender of all game. Along with the leg, the loin is one of the most exquisite cuts of venison and is therefore particularly popular with gourmets. Compared to the stately red deer, the roebuck is slightly narrower and lighter

The characteristic dark red colour of the deer is also present here, but is slightly less intense. The flavour of the venison fillet is similar: fine-grained and high in protein, with little fat and a wonderfully subtle game flavour.

There are even more reasons to eat venison. Because of its life in the wild, venison is one of the highest quality meats available. Living in the wild, only the best food is on a wild animal's menu. This includes herbs, grasses, fruits and fresh leaves

This makes the meat not only extremely high quality, but also rich in protein. Venison is also low in fat and high in healthy omega-3 fatty acids. The deer's lifelong freedom of movement and balanced diet make the meat particularly fine, juicy and tender, with an unmistakable dark red colour. It is the perfect meat to enjoy in all its glory!

What makes our venison fillets so special?

At Fitmeat, we place the highest value on fine cuts of meat. That's why our master butcher trims the back of the venison and cuts it into fine pieces. The back is characterised by a particularly fine structure due to the short fibres.

Our high quality venison comes exclusively from wild animals shot by experienced hunters in Salzburg and the Königsbrunn region of Lower Austria.

As Fitmeat places the highest priority on perfect quality and respectful treatment of animals, we strictly distance ourselves from creel hunting. Any kind of rushing or driving of the animals is a major loss of quality and is strictly rejected by us and our hunters.

Instead, we use a gentle approach that does not stress the wild animals and thus ensures high meat quality and fine texture.

What makes our game different?

After a successful hunt, the game is taken to a selected butcher where it undergoes a further veterinary inspection before the meat is matured. Only then is the game processed by master butcher Martin Böck in Rastenfeld with a trained eye and careful hand into genuine game specialities.

In addition to the classic cuts such as back, leg or ragout, specialities such as venison burger patties are also produced. Hunters and butchers work hand in hand to guarantee the best possible game quality.

This includes a precise shot, an enclosed chilling chamber and the professional and flawless processing of the venison.

There are two venison fillets in one package. Depending on the size of the side dishes and how generous they are, 3 - 5 people can be optimally served.

The Salzkammergut in Upper Austria, with its large areas of forest and meadows and low population density, is the ideal home for the wild animals that have settled here.

Rivers and streams ensure that the area is well watered. This allows grasses and flowers to grow, providing first-class food for the animals. Careful hunters and foresters manage these areas with great dedication.

The hunted animals are brought to the nearby game room, inspected by the official veterinarian and respectfully processed by our master butcher.
