Meat knowledge

Mildly smoked over beechwood and matured for four to twelve weeks, the pancetta acquires its unmistakably fine, mild flavour. Made from 100% of the best meat from the Greflgut organic farm in Vöcklamarkt and from the marvellous lake region in the Salzkammergut.

Genuine pancetta is a speciality that plays a particularly important role in Alpine cuisine. During production, the belly is first salted and then seasoned. It is then cold-smoked over beechwood for several weeks. To give it its very special, smoky flavour, the pancetta is then matured in beech ash. 

Pancetta with extra flavour 

The secret of our pancetta is patience and a sure instinct. This is because cold smoking is a rather intricate process in which smoking and airing phases alternate again and again. And the whole thing takes place over a period of three weeks. 

This is exactly where the pancetta develops its full flavour and characteristics as it slowly smokes over beechwood. But our experienced master butcher has come up with something very special for this piece. Instead of simply leaving the bacon to dry in the air, the piece is matured in beech ash. 

The aroma alone is enough to make your mouth water. In the kitchen, pancetta is used in a variety of ways, whether as a flavourful ingredient in stews and sauces, as a topping on bread or simply served as a snack in thin slices. Thanks to its aromatic depth, it also goes perfectly with pasta or crispy fried as a topping for salads.
