The shoulder, also called the Shoulder without bone, round cut, is a part of the forequarter of the pig. The shoulder of the pig lies directly next to the neck area. The meat has rather long fibres and a comparatively high proportion of tendons.

In terms of taste, the shoulder is a real hit. It has a strong flavour of its own with a bit of bite. Shoulder without bone, round cut can be used to make roast pork, rice meat, pulled pork, rolled roast and many other dishes.

What is so special about the shoulder without bone, round cut?

In its "washed" state, the shoulder comes with bones, fat cover and rind. But at Fitmeat you can also get the Shoulder without bone, round cut without the rind. This means that the fat content is now 5 - 7 %. A very fine alternative to other cuts.

Shoulder without bone - the BBQ highlight

Due to the structure of the meat, the shoulder without bone, round cut is ideal for "low and slow" preparations. In other words, slow cooking at low temperatures.

Connoisseurs know what we are talking about. That's right, it's time for smocking! Because it is precisely here that a wonderful meat aroma develops and the meat can be plucked into individual fibres.

We recommend one kilogram of shoulder for three to four people.

Pigs are extremely intelligent and clean animals. Therefore, species-appropriate and caring rearing is the be-all and end-all for us.

A requirement that is also noticeable in the taste. If you compare pigs from factory farms, for example, one thing is immediately clear: due to the permanent stress, the meat is much firmer, loses a lot of water during roasting and has hardly any flavour of its own.

For us at Fitmeat, this kind of rearing is out of the question for many reasons. We fight for animal welfare and the appreciation of meat products and strictly distance ourselves from immoral factory farming.

After the careful and stress-free individual slaughter of the pigs, our butchers leave the straw pigs to mature on the bone for a few days. The result is juicy and tender pieces of pork with a wonderful aroma.
